Cauliflower Fried Rice is our new go-to for quick, healthy comfort food that tastes like it rode straight outta our favourite takeout joint, only it's cleaner, greener, and easy to whip up. You won't believe it's cauliflower instead of rice, it's that satisfying. Every bite is a showdown of colour and flavour: earthy shiitake mushrooms bring that deep, savoury "umami" kick, while bright broccoli and sweet carrots ride in with crunch and nutrients to spare. Edamame beans and Just Egg add a protein punch that'll keep your posse full, and fresh ginger gallops through the dish with a warm, zesty zing. It's wholesome, hearty, and outrageously tasty, proving once and for all that healthy doesn't have to be boring. Even the pickiest one in your posse will be begging for seconds.

Ingredients
 
 
  • ¼ cup tamari or Bragg Seasoning, divided into 3 tbsp + 1 tbsp
  • 2 tbsp sesame oil, divided into 2 x 1 tbsp
  • 1 tbsp rice vinegar
  • 2 tsp grated ginger root
  • ¼ tsp white pepper
  • 2 packets Just Eggs
  • 1 small onion, diced (about 1 cup)
  • 2 cloves garlic minced (about 1 tsp)
  • 2 cups chopped shitake or crimini mushroom (about 8 medium)
  • 1 small stalk broccoli florets and stems cut into bite-sized pieces (about 1 cup)
  • 2 carrots peeled and grated (about 1 cup) + a few for garnish
  • 5 cups crumbled cauliflower (about 1 medium head of cauliflower)
  • ½ cup frozen corn
  • ½ cup frozen edamame beans
  • 2 green onions thinly sliced (about ¼ cup) + a few for garnish
  • ½ tsp sesame seeds
Instructions
 
  • In a small bowl, add 3 tbsp tamari, 1 tbsp each sesame oil and rice vinegar, 2 tsp grated ginger root, and ¼ tsp white pepper. Whisk until well combined.
  • Cut 2 packets of just eggs into cubes.
  • Place a wok or large frying pan on medium-high heat and add 1 tbsp toasted sesame oil. Once hot, add 1 cup diced onion and 1 tbsp tamari. Sauté until translucent and starting to brown, about 5 minutes. Add a little water if onions begin to stick.  Add 2 minced garlic cloves, stir until well combined, and cook for 1–2 minutes to let flavours seep into onions. Add 2 cups chopped mushroom and sauté until they start to brown (about 5 minutes). Add about 1 cup each chopped broccoli and grated carrots and ½ cup each frozen corn and edamame beans. Cook, stirring constantly, until vegetables are tender, about 3-4 minutes.
  • Stir in 5 cups crumbled cauliflower, cubed Just Eggs, about ¼ cup diced green onions, and tamari mixture. Cook, stirring constantly, until heated through and the cauliflower is tender, about 3-4 minutes.
  • Garnish with ½ tsp sesame seeds, a few grated carrot slices, a few sliced green onion and serve immediately.
Breakout Trick
To make the cauliflower rice, pulse cauliflower in the bowl of a food processor until it resembles rice (about 2-3 minutes) and set aside.
Substitute Just Egg with medium firm tofu or edamame beans.
For soy-free, replace Bragg soy seasoning or tamari with coconut aminos (soy-free seasoning).
