Ingredients
 
 
  • tbsp ground flax seed
  • tbsp water
  • 3 tbsp brown rice syrup or raw blue agave nectar
  • 3 tbsp Inulin
  • tbsp cashew butter
  • 1 tbsp cocoa powder
  • 2 tsp coconut oil
  • 2 tsp chocolate chips
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • cups brown rice crispy cereal
Instructions
 
  • Line a 5- x 9-inch loaf pan with parchment paper and set aside.
  • In a medium bowl, add 1½ tbsp each ground flax seed and water. Stir until well combined and set aside for 5 minutes to thicken.
  • Add 3 tbsp each brown rice syrup and Inulin, 1½ tbsp cashew butter, 1 tbsp cocoa powder, 2 tsp each coconut oil and chocolate chips, 1 tsp vanilla extract, and ¼ tsp salt. Whisk until well combined.
  • In a medium bowl, add 1½ cups crispy brown rice cereal and stir in the wet ingredients. Stir until well combined and cereal becomes sticky.
  • Scoop mixture into a lined pan and cover it with a piece of parchment paper. Press firmly into place. Score the loaf into 6 even-sized pieces and refrigerate until firm.
