Ingredients
  
  • ¼ cup lime juice (3–4 limes)
  • ¼ cup cilantro leaves chopped
  • 1 tbsp maple syrup or raw blue agave nectar
  • ½ tsp onion powder
  • ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp Sriracha sauce or chili garlic sauce
  • ¼ tsp garlic powder
  • ¼ tsp chili powder
  • ¼ cup olive oil
Instructions
 
  • In a small food processor or medium bowl, mix ¼ cup each lime juice and chopped cilantro leaves, 1 tbsp maple syrup, ½ tsp each onion powder, ground cumin, salt, and Sriracha sauce, and ¼ tsp each garlic powder and chili powder. Process or whisk until well combined. While whisking, slowly drizzle in ¼ cup olive oil and continue whisking until the oil emulsifies with the remaining ingredients. If using a food processor, pour in ¼ cup olive oil and process until well combined. Pour into a small jar, seal, and shake, then set aside to intensify the flavours. Shake before using.

  • If you refrigerate the dressing, remove it a few hours before use to allow the oil to properly liquify. Shake before using.
