
Greek Salad with a Twist

Not only will you find the usual suspects, like crisp cucumbers, juicy tomatoes, and briny Kalamata olives, but we’ve also rounded up a few renegade ingredients to shake things up. Tangy green olives join the mix for double the olive action, and tender artichoke hearts swoop in to add a hearty, flavourful punch. And let’s not forget the real game-changer: crunchy, zesty Santorini Spiced Walnuts! These bad boys bring a whole new level of Mediterranean magic to the scene. But hold onto your hats ‘cause our signature Greek salad dressing is the real kicker. It’s pure bliss in a bottle—a perfect balance of zippy lemon, bold garlic, and silky olive oil with just the right touch of herbs. Drizzle it generously over this salad, and you’ll have a dish so fresh, zesty, and satisfying that your taste buds will be two-stepping all the way to Santorini.
Ingredients
- ½ cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 tbsp minced oregano leaves
- 1 tbsp minced parsley leaves
- 1 clove garlic (about ½ tsp)
- 2 tsp raw blue agave syrup
- ½ tsp Dijon mustard
- ½ tsp Spike all-purpose seasoning or Old Bay seasoning
- ¼ tsp ground allspice
- ¼ tsp salt
- freshly ground black pepper to taste
Greek Salad
- 1 head green or leaf lettuce
- ½ long English cucumber
- 2 medium tomatoes
- 1 yellow or orange bell pepper
- ¼ red onion
- ½ cup artichoke hearts
- ½ cup pitted kalamata olives (about 24)
- 2 tbsp pitted green olives (5-6 medium)
- ½ cup Santorini Spiced Walnuts
Instructions
Prepare Greek Salad Dressing:
- In a small jar or container with a lid, mix ½ cup olive oil, 2 tbsp lemon juice, 1 tbsp red wine vinegar, 1 tbsp minced parsley leaves and minced oregano leaves, 1 minced garlic clove, 2 tsp each raw blue agape syrup, ½ tsp each Dijon mustard, spike seasoning, ¼ tsp each ground allspice and salt, and freshly ground black pepper.½ cup extra virgin olive oil, 2 tbsp lemon juice, 1 tbsp red wine vinegar, 1 tbsp minced oregano leaves, 1 tbsp minced parsley leaves, 1 clove garlic, 2 tsp raw blue agave syrup, ½ tsp Dijon mustard, ½ tsp Spike all-purpose seasoning or Old Bay seasoning, ¼ tsp ground allspice, ¼ tsp salt, freshly ground black pepper
- Seal and shake until ingredients are well combined, then set aside to intensify the flavours. Shake before using.
- If you refrigerate the dressing, remove it a few hours before use to allow the oil to properly liquify. Shake before using.
Greek Salad
- Wash 1 head of green leaf lettuce, remove core, and tear into bite-sized pieces. Dry thoroughly and place 6 cups into a large salad bowl.1 head green or leaf lettuce
- Dice ½ long-English cucumber (about 2 cups), dice 2 medium tomatoes (about 2 cups), and remove the pulp and dice 1 yellow bell pepper (about 1 cup). Thinly slice ¼ of a red onion, then cut pieces into halves (about ¼ cup), and put a few slices aside for garnish. Chop ½ cup artichoke hearts. Pit and quarter ½ cup pitted kalamata olives. Quarter 2 tbsp pitted green olives.½ long English cucumber, 2 medium tomatoes, 1 yellow or orange bell pepper, ¼ red onion, ½ cup artichoke hearts, ½ cup pitted kalamata olives, 2 tbsp pitted green olives
- Add cut veggies to a large salad bowl as you prepare them. Toss until well combined. If you are serving the entire salad, pour all the dressing over the salad and toss gently before adding about 2⅓ cups per bowl into 6 individual bowls. Top each serving with a sprinkle of minced oregano leaves and minced parsley leaves, a few slices of quartered kalamata and green olives, chopped artichoke hearts, and a couple of Santorini Spiced Walnuts. However, if keeping some of the salad for another meal, add 2 tbsp salad dressing per bowl, toss well, and garnish with the toppings.
