Breakfast in Spanish is called Desayuno – and we say this one is a good one. It may not be the typical Mexican breakfast but it sure is a great way to break your fast. Typically, in Mexico eggs and beans are a good way to start the day, but we have decided to opt out eggs and opt in rice instead. Filled with protein and nutrients, it is a wonderful way to start your day. Variety is the spice of life! (Other people argue it’s chilis; luckily for you this recipe has both).
