We're excited to share some delicious news — Linda Purcell, creator and chef behind Veggie OUTLAWS – Most Wanted Vegan Recipes, has been selected as one of nine speakers for TEDxUBC’s Open Mic Night! 🎤

Join us on Monday, October 28th, 2025, from 6:00 to 7:30 PM at the University of British Columbia (UBC) for an evening of bold ideas, creative energy, and inspiring talks from UBC voices.

Linda’s talk, “Busting Myths and Savouring Truths: The Delicious Journey of Plant-Based Eating,” explores the fun, flavourful side of plant-based living — breaking down myths about vegan food being bland, expensive, or complicated, and showing how small changes can make a big impact on health, sustainability, and joy.

Presented by:
Linda Purcell is the chef and author of Veggie OUTLAWS — Most Wanted Vegan Recipes. She has a Plant-Based Nutrition Certificate from eCornell and T. Colin Campbell Center for Nutrition Studies. This certificate includes Plant-Based in Practice, Nutrition and Chronic Disease, and Nutrition and Society. Raised on the standard American diet, Linda has been a plant-based enthusiast for more than 14 years and now enjoys healthy vegan foods exclusively. Since 2008, she has been driven by her love of experimenting with food to invent exciting ways to combine different flavours, creating over 1,000 plant-based recipes. She constantly researches how food impacts health, discovering and implementing the latest nutritional findings. Her goal is to incorporate superfoods in delicious ways to make the Most Wanted Vegan Recipes.



About the Author Linda Purcell

I am Linda Purcell the author of Veggie OUTLAWS – most wanted vegan recipes. I have been vegetarian for the past 12 years, a transitional vegan for the last few years, and am now committed to eating only plant-based foods. I moved towards eating more plant-based foods because I care about the health of my family. I have compassion for animals. And I know a vegan lifestyle is better for the planet.
