  • 1 cup Milk Mixture or plant-based milk of your choice
  • 2 cups frozen banana chunks
  • 1 cup frozen strawberries
  • 1 cup frozen sliced mango
  • 4 chopped Medjool dates
  • 2 tbsp cane sugar
  • 1 tbsp cocao nibs
  • 1 tsp cocao nibs for topping
  • 1 tsp vanilla extract
  • 1 tsp sliced almonds for topping
Instructions

  • Add to Vitamix blender or food processor, 1 cup milk mixture, 2 cups frozen banana chunks, 1 cup each frozen strawberries and frozen mango, 2 tbsp cane sugar, 4 chopped Medjool dates, 1 tbsp cocoa nibs, and 1 tsp vanilla extract.

  • Process until smooth and creamy (3–5 minutes). Start on level 1 and slowly increase to top speed. Continue processing until all the ingredients are incorporated and no chunks remain. As the mixture is quite thick, you may need to help keep it moving. If using a Vitamix, insert the bonker (aka Vitamix tamper tool) to keep the mixture processing. If using a food processor, scrape down the sides with a rubber spatula as needed.

Breakout Trick
This makes a low-fat dessert that is super tasty, but if you want something richer and creamier, you can increase the amount of coconut milk in your milk mixture. The more coconut milk you use, the more decadent (and higher in fat and calories) the result.
