
Smoky Rosemary Chermoula Sauce
Our Smoky Rosemary Chermoula Sauce, made with cilantro, parsley, garlic, smoked paprika, a squeeze of lemon, and a dash of fresh rosemary, comes together in minutes. Originating in North Africa, chermoula is a traditional Moroccan sauce used to marinate or flavour your favourite vegetables or grains, and it’s famous for its bright, zesty punch. It’s the kind of most-wanted sauce that turns plain veggies, tofu, or grains into flavour fugitives you’ll chase down to the last bite. Packed with antioxidants, vitamin C, and healthy fats, it’s as good for your body as it is dangerous to bland food.

Ingredients
- ½ cup fresh cilantro leaves loosely packed
- ½ cup chopped fresh flat-leaf parsley leaves loosely packed
- 2 cloves garlic peeled
- 1 tsp fresh chopped rosemary leaves
- 1 tsp grated ginger root
- 1 tsp lemon zest
- 2 tbsp lemon juice (about 1 lemon)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp ground coriander
- ½ tsp chili flakes
- 6 tbsp extra virgin olive oil
Instructions
- In a small food processor, add ½ cup each chopped cilantro and parsley leaves, 2 whole garlic cloves, and 1 tsp each chopped rosemary, grated ginger root, and lemon zest. Pulse a few times.
- Add 2 tbsp lemon juice, 1 tsp each ground cumin and smoked paprika, ½ tsp each salt, ground coriander, and chili flakes, and 6 tbsp olive oil. Process the mixture until a thick, spoonable paste forms.
- Use immediately, or store in the fridge in an airtight container for up to a week.
