Tamarind Paste from Pods

Uncover the secrets hidden within 20 tamarind pods. Peel away the cloak of mystery, soak in hot water, and let the flavours conspire for an hour. With a spatula as your trusty sidekick, sieve out the unneeded bits and pieces until you're left with pure tamarind magic. There are many wonderful things you can make, including Bestcestershire Sauce, tamarind chutney, delicious marinades, and stir-fries, or add depth or complexity to curries.

Ingredients
  
  • 20 tamarind pods
  • hot water

  • Remove the shell and veins from each tamarind pod.  Place pods in a large bowl.

  • Cover the pods with hot water and cover with a lid. Let the pods soak for 30-60 minutes.

  • Drain the water. Using a large spoon or your fingers, push the soaked pod mixture through a sieve held over a clean bowl. Keep pushing and scraping until only seeds and stringy materials remain in the seive. Scrape the bottom of the seive as needed. Add a little water to the seeds and stringy material to remove any remaining pulp. Push any remaining pulp into the bowl.
  • Discard the remaining seeds and stringy material. Transfer the paste to a jar and refrigerate until needed.

Store in the fridge for up to 10 days. Freeze in â…“-cup containers for easy use.
