  • 4 cups Pacific Creamy Tomato Basil Soup or Imagine Creamy Garden Tomato (1Ltr container)
  • 2 cups chopped mushrooms
  • 2 cups low-sodium vegetable broth
  • ¾ cup diced tomato (about 1 medium) + a small amount for garnish
  • ½ cup chopped broccoli
  • cup black beans
  • 1 tbsp minced basil leaves
  • 1 tbsp minced parsley leaves + a small amount for garnish
  • tsp Bragg soy seasoning
  • 1 tsp Bestchestershire sauce
  • ½ tsp Spike seasoning
  • ½ tsp dried marjoram or oregano
  • ¼ tsp ground allspice
  • freshly ground black pepper
Instructions
 
  • In a medium soup pot, add 4 cups Pacific Creamy Tomato Basil Soup, 2 cups chopped mushrooms, 2 cups low-sodium vegetable broth, ¾ cup diced tomato, ½ cup chopped broccoli, ⅓ cup cooked black beans, 1 tbsp each minced basil leaves and minced parsley leaves, 1½ tsp Bragg seasoning, 1 tsp Bestcestershire Sauce, ½ tsp each Spike seasoning and dried marjoram or oregano, ¼ tsp ground allspice, and freshly ground black pepper. Stir to combine, cover with a lid, and cook for 5–10 minutes or until veggies start to soften. Let sit for 5 minutes before serving.
  • Ladle the soup into bowls and serve with a sprinkle of parsley and a few slices of diced tomato.
