Ingredients
  
  • 1½ cups raw long-grain brown rice washed and rinsed
  • 2 cups water
  • 1 cup canned low-sodium diced tomatoes (â…“ of 28-oz can)
  • 1 large red bell pepper diced with seeds and pulp removed (about 1½ cups)
  • 1 tsp Cajun spice
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1 tbsp minced thyme leaves
Instructions
 
  • Place saucepan on medium-high heat and add 1½ cups washed and rinsed raw long-grain brown rice, 2 cups water, 1 cup canned low-sodium diced tomatoes, about 1½ cups diced red bell pepper, and 1 tsp each Cajun spice, smoked paprika, and salt. Stir until all ingredients are combined, cover with a lid, and bring to a boil. Reduce to medium-low and simmer until all liquid has been absorbed (about 25 minutes).

  • Remove from stovetop and stir in 1 tbsp minced thyme leaves. Fluff up with a fork and cover.
