Cajun Rice

Ingredients
- 1½ cups raw long-grain brown rice washed and rinsed
- 2 cups water
- 1 cup canned low-sodium diced tomatoes (â…“ of 28-oz can)
- 1 large red bell pepper diced with seeds and pulp removed (about 1½ cups)
- 1 tsp Cajun spice
- 1 tsp smoked paprika
- 1 tsp salt
- 1 tbsp minced thyme leaves
Instructions
- Place saucepan on medium-high heat and add 1½ cups washed and rinsed raw long-grain brown rice, 2 cups water, 1 cup canned low-sodium diced tomatoes, about 1½ cups diced red bell pepper, and 1 tsp each Cajun spice, smoked paprika, and salt. Stir until all ingredients are combined, cover with a lid, and bring to a boil.
